Toffee Chocolate Chunk Banana Muffins
I hope you all remember what tomorrow is. For anyone who was lame enough to forget... IT'S MOTHER'S DAY.
In case you haven't caught on yet through reading my fine blog, I LOVE my mom. She's the coolest ever. Not only is she my bestest friend, but she also shares all of her clothes ("Here, have the shirt off my back Yammie! It will match your scarf!"), gives in to all of my childish whims, like my peeve concerning direct written orders ("Yammie, please do NOT clean the kitchen, unload the dishwasher, tidy up the screened in porch, or take your laundry up today. Love, Mom"), and she even puts up with my endless chattering when I've had too much caffeine and nobody else wants to listen to me ("Um, Yammie. You've been following me all around the house all day. Do have anything else you need to do today? No? Okay then. Come on.").
So, this one is for all the awesome moms out there (even though you're probably not as cool as mine). This is for all the kids who want to make their moms a crazy awesome breakfast in bed tomorrow morning. This is for all the ladies with a sweet tooth who would like a cookie for breakfast, but feel too guilty and have a muffin with all the same outrageously good health benefits of a cookie instead.
Toffee Chocolate Chunk Banana Muffins
Makes about 1 1/2 dozen
2 eggs
3/4 cup brown sugar
1/4 cup oil
1/4 cup melted butter
1/4 cup milk
1 teaspoon vanilla
1 3/4 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
4 bananas, smashed
1 cup chocolate chips or chunks (1/2 cup is probably enough if you don't want them too loaded. Same with the toffee.)
1 cup toffee chips, plus more to top (I used Heath bits with chocolate on them)
Preheat oven to 375ยบ. Whisk together the eggs, sugar, oil, butter, milk, and vanilla. In a separate bowl, mix together the flour, salt, soda, powder, and cinnamon. Add to the egg mixture and mix just until combined. Add the bananas and mix just until combined. Fold in chips and Heath bits. Fill greased muffin tins all the way and sprinkle with more heath bits. They take about 12-17 minutes and are done when a toothpick comes out clean.
