Shrimp and Bacon Salad




Guys. This is really freaky. My neck is itchy.

So, soooo itchy.

It has been all day. And no, I don't mean my throat, because I totally figured out the difference between necks and throats like, three years ago. Though my throat has been itchy too, coincidentally.

I wonder if this has anything to do with my Christmas allergy. I must have gotten some Christmas spirit on my turtleneck.

Oh wait, I don't have a turtleneck.


Enough about itchy necks. Just let me know if you can give me any advice on how to rid myself of this affliction. 

Now, onto the next thing. SALAD. I can't believe I used to hate salad. Actually I can. Cause raw vegetables are typically nasty. But, it can be done right. And it can be done in under five minutes. And it can make your mouth water more than any soup or sandwich. And you might eat it for lunch every single day for the rest of your life.

And I'm not giving you exact measurements. I was selfish and only made one for myself using about 5 shrimps, one piece of bacon, a fourth of an avocado, half of a small tomato, a little onion, and a cup or so of spinach, but just use however much of everything you like. It's not like there's any chemistry involved here. Just fast, easy deliciousness.

Shrimp and Bacon Salad

Frozen precooked jumbo shrimp
Smoked paprika
Garlic salt
Cooked bacon
Avocado
Onion
Tomato
Spinach
Catalina Dressing

Cook your shrimp in a little oil or in a little bit of leftover bacon grease. Season generously with smoked paprika and garlic salt. They only take a couple minutes to cook, just until they're warm all the way through. Don't overcook or they will get rubbery. Make sure you flip them halfway through.
Chop up some avocado, onion, and tomato and throw it on some spinach. Crumble on the bacon and put the shrimp on. If it still has tails, you'll probably want to take them off before you eat them. Add some dressing. I used premade Catalina, but I like this homemade stuff better when I have a couple seconds to make it:

Homemade Catalina Dressing:
1/2 cup olive oil
3/4 cup sugar
1/3 cup ketchup
1/4 cup vinegar (apple cider vinegar is nice if you have it)
2 teaspoons worcestershire sauce
Salt to taste

Whisk together until well combined.


Sorry, you don't get pictures of the dressing. As soon as it made a touchdown onto those little shrimpies, the salad was completely inhaled.
