Two Minute Apple Pie Parfaits
Work is boring stuff. It has the power to strip any day of its potential greatness. That's why lunch on a work day must always be worthwhile. This means that vegetables will not be involved. And since we're not having vegetables, we need to make up for it with extra fruit.
But the apples are too cold, we just spent ten minutes in a frozen car that only just got warm as we drove in the driveway. I guess we'll just have to warm them up. And what the heck, let's put a little sugar on em while we're at it. Instant apple pie. Lameness diverted. Greatness restored. Plus, since I usually buzz home for lunch, I get the added bonus of free entertainment. Today for example, Boots told me about his dream last night. He was playing werewolves with Mom and suddenly she put her hand on his shoulder and her voice got really low and freaky and she said, "Boots, I'm not pretending anymore."
Poor kid.
So, here's how you make your instant apple pie parfait. First coat your apples in sugar, cinnamon, corn starch, and some vanilla.
One minute in the microwave. Throw a little granola on top if you feel like it.
And if your day needs a serious boost, go for the ice cream. It has calcium, duh. Gotta keep it real with those five food groups.
And if you want to make more than one, you can either cook all the apples in a microwave save bowl all together (in which case you'll have to cook them a little longer and you might want to stir them every once in a while) or you can divide the apples into individual glasses and then microwave each one for a minute.
Two Minute Apple Pie Parfaits
1 firm apple
1 tablespoon brown sugar
1/2 tablespoon cornstarch
1/4 teaspoon vanilla
1/4 teaspoon cinnamon (more or less, depending on what you like)
Granola and/or ice cream for topping (This is my favorite granola recipe. Here's a healthier version)
Peal and chop the apple. Toss it with the brown sugar, cornstarch, vanilla, and cinnamon. Microwave for about 1 minute or until the apples are tender. Top with granola and ice cream if desired.
You can multiply this recipe for as many parfaits as you want. You can either mix it all up and divide it into the glasses and cook them each separately, or you can mix it all up, cook it and then divide it into the glasses. If you cook all the apples in one bowl for multiple servings, just stir after each minute until the apples are done.
