Triple Chocolate Brownie Cookies
So you guys thought I would never actually fulfill my dream of catering.
WELL THINK AGAIN.
This weekend I catered for my cousin's graduation party with the help of my wonderful assistants, Nemo and Piggie. Piggie made the famous Oreo dessert and some brownies with coffee frosting seen on the far end. In front of those you see my K-bars next to my loaded oatmeal cookies. On the cake stand you can see a flourless chocolate cake with Italian meringue buttercream. There's also a plain cheesecake and a turtle cheesecake, a chocolate covered strawberry tower, Nemo's cream puffs, and my chocolate chip cookes. Marshmallow flower cupcakes, potato salad, a carved watermelon fruit bowl, and Nemo's caprese bites and coconut cream pastries are not pictured. Then there were these fabuloso cookies...
Needless to say, by the time the party finally started, we were pooped. So we sat at a card table playing euchre for about five hours, only pausing to inhale dessert sample platters and plastic cups of wine that people kept bringing us. GOOD TIMES.
Triple Chocolate Brownie Cookies
Makes a few dozen I think
2 sticks of butter
2 1/4 cups of sugar
4 large eggs
1 tablespoon vanilla
1 1/4 cups of cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cups all-purpose flour
1 cup semi-sweet chocolate chunks
1 cup white chocolate chips
1 cup milk chocolate chips
1 cup crushed walnuts
Mix together the butter and sugar in a microwave safe bowl. Heat in the microwave, stirring about every 30 seconds, until the mixture is bubbly and smooth (you can also do it on the stove top if you want). Add in the eggs and vanilla and beat until smooth. Mix together the cocoa powder, salt, baking powder, and flour and add to the butter mixture, mixing until smooth. Stir in the chocolate chips and nuts. Chill the dough in the fridge or freezer until it's pretty solid. Preheat the oven to 375ºF. Form the dough into pretty big, slightly flattened chunks. Bake for about 9-13 minutes or until desired doneness is reached. It depends on how big you make them and how done you want them.
