Crispy Honey Garlic Sweet and Sour Tilapia


My Mom is a picky eater. It's hard to get her to eat her fish. Apparently fish just tastes too fishy for her. 



I don't know which is weirder, the fact that the daughter is always finding new ways to trick the mother into eating new things (backwards much?), or the fact that the mother thinks fish is too fishy. I mean, that's like saying apples are too appley or chicken is too chickeny. Fish is supposed to be fishy. That's why it's called fish.


But if you are like Mom, and don't like fishiness, you will still like this. It's very crispy and crunchy, the fish is very tender, and the sauce is so blasted with flavor you'll forget about everything else.

But if you still think it's too fishy, feel free to use chicken. You'll just have to cook it longer. 
 
Crispy Honey Garlic Sweet and Sour Tilapia

8 Tilapia filets
2 teaspoons salt
1 teaspoon pepper
2 cups flour
2 eggs
1/2 cup water

3 cloves garlic, minced
1 tablespoon olive oil
2/3 cup honey
1/4 cup cider vinegar
1/2 tablespoon garlic powder
2 tablespoons soy sauce
1 tablespoon corn starch

Mix together the flour, salt, and pepper in a shallow dish. In another shallow dish beat the eggs and water. Dip the filets in the egg wash, then the flour, then the egg again, and finally the flour again. Fry in a small amount of oil in a large skillet over medium high heat until both sides are browned and the fish flakes with a fork. You might have to do it in batches, but it only takes a few minutes per side. 
Meanwhile cook the garlic and olive oil over medium high heat in a saucepan until slightly browned. Add the honey, vinegar, garlic powder, and soy sauce and whisk over the heat for a few minutes until the sugar is dissolved and the mixture is boiling. Whisk in the corn starch and cook just until desired thickness is reached. If it gets thicker than you wanted, add a little water. Pour over fried tilapia.

And if you like your sauce thinner, just omit the corn starch. That's what I did at first (as seen above), but then I decided I would rather have it thicker. What can I say, I like my fish fishy and my goop goopey.
